(Making A 9 Inch Double Crust Pie )

Line a 9 inch Pie Pan with: Pie Crust*


*(Note: A store bought, pre-made pie crust is fine, either a plain/regular pie crust or cheese pie crust if you like. Be sure that you get 2 pie crusts for each apple pie, one crust for the bottom [body] and one for the top [the cap] and follow the package instructions. Most store sold pre-made pie crusts come 2 or more per package. If you wish to make the pie crust see  The Best Ever Pumpkin Pie! )


Into An Appropriate Size Bowl, Peel, Core and Cut into Thin Pieces:

   6 medium-sized apples

( Note: Golden Delicious and Granny Smith are apple pie staples; the Golden Delicious are on the sweet side and the Granny Smith on the tart side. Mix the two for an excellent tasting pie).
Also, good Tart Baking Apples include Idared, Macoun, Newton Pippin, and Northern Spy.
Good Sweet Baking Apples include Braeburn, Fuji, Mutsu, Pink Lady, Suncrisp, Rome Beauty, and Empire.
For a good combination of Sweet and Tart rolled into one try Jonathan, Stayman-Winesap, Cox's Orange Pippin, and Jonagold.

( Also Note: Stay away from McIntosh and Cortland as they become mushy when cooked. )


Combine and Sift Over the Apples:


    1/2 to 2/3 cup white or brown sugar*
    1/8 teaspoon salt
    1 tablespoon to 1 1/2 tablespoons cornstarch*
    1/4 teaspoon cinnamon
    1/8 teaspoon nutmeg

( * NOTE: Only very tart apples require the larger amount of sugar.
Only very juicy apples require the larger amount of cornstarch. )

If the apples are very dry add:
    2 tablespoons water or cream.


Stir the apples gently until they are well coated.
Place them in layers in the pie shell.
     Dot them with:
    1 1/2 tablespoons butter
If the apples lack flavor sprinkle them with:
    1 tablespoon lemon juice
    1/2 teaspoon grated lemon rind
     (1 teaspoon vanilla)


Cover the pie with a fork/knife/toothpick pricked upper crust (the second of the two pie crusts).
Bake the pie in a hot oven 450 degrees for 10 minutes.   THEN
Reduce the heat to 350 degrees.
Bake the pie until done, on average from 3/4 to 1 hour in all.

A delicious, special touch is to sprinkle the top crust lightly with sugar and cinnamon as you put it into the oven. Some cooks brush it first with milk ( helps the sugar and cinnamon stick to the crust ).
If you choose to do this then Bake it in a hot oven 450 degrees for 20 minutes before reducing the heat to 350 degrees.

(BAKING NOTE: Since most fruit fillings like to bubble over I recomend placing the pie plate on a cookie sheet or piece of aluminum foil. If some fruit juice does spill-over into the oven sprinkle the spill with salt to prevent smoke and smell.

Sprinkle over the top:
    1 cup grated cheese
Place the pie under a broiler to melt the cheese.



    Let Cool.
