HOW TO COOK THE PUMPKIN
Wash the pumpkin well and cut the pumpkin in half crosswise
(removing top part of the pumpkin where the stem is attached and
cutting off enough so that there's at least an 8 Inch opening allowing you to easily get your hand into the pumpkin to scape out the seeds and strings ). Remove all the seeds and stringy stuff ( not to be used for the pie ). Place the pumpkin in a pan shell side-up ( like an upside down bowl ) and bake it in a regular oven 325 degrees for 1 hour or more depending on its size ( the larger the pumpkin the longer it will take to cook so let it bake a little longer ) and cook it until it's tender and begins to fall apart. Scrape the pulp from the shell and put it through a ricer or strainer. Then on to make the pie.
MAKING THE PUMPKIN PIE
( A 9 Inch Pie ... So You'll Need A 9 Inch Pie Plate )
Blend Well ( In a large bowl ) :
6 tablespoons brown sugar
2 tablespoons white sugar
1/2 teaspoon salt
1 teaspoon +/- cinnamon
1/2 teaspoon ginger
1/8 teaspoon cloves
1/2 cup of dark corn sirup
3 slightly beaten egg yokes ( just to break the yokes
and get everything a little mixed-up, not like
making scrambled eggs )
The egg whites may be beaten separately and
folded in last.
Add To The ( above ) Mixture*:
1 1/2 cups cooked ( see top of recipe for cooking instructions ) or use canned pumpkin
1 1/2 cups of undiluted evaporated milk or use rich cream
Fold In The Egg Whites
*You May Also Add ( If you like ):
1 teaspoon of vanilla or 2 tablespoons of brandy or rum
And/Or
3/4 cup of black walnut meats
THE PIE CRUST
Place you pie shell into your 9 Inch pie plate fitting it nicely to all sides.
If the pie shell isn't already fluted you might want to flute it ( take a fork and
press it, flat not points, against the top 3/8 - 1/2 Inch of dough ( shell ) to make indications
and go around the entire top edge ).
Pour the Pumpkin Mixture into the pie shell.
Bake in a pre-heated ( hot ) oven - 425 degrees - for about 1 hour, or until a metal knife inserted into the filling comes out clean.
